Introduction to Hokuriku Food Design Labo
We have a production line for rice syrup and vegi syrup and carry out Direct to Consumer (DtoC) product development, catering to both domestic and international customers. We provide flexible solutions based on our customers’ preferences. For instance, in the United States, our products are utilized as honey alternatives, in Europe for fermented foods, and in Southeast Asia as sugar-free options.
We have repurposed a facility that was formerly our barley tea factory and are currently utilizing it. Factory tours are available at any time!

Filtration System
Our filtration system includes a screen mesh filter that separates rice syrup, vegi syrup (liquid sugar), and protein (filtration solids).
This is the syrup immediately after extraction. The color may vary depending on the raw materials. (The left image shows syrup for rice cakes.)
Soaking and Steaming Machine
After soaking the raw materials (the duration varies depending on the material’s shape), they move on to the steaming process. This process converts the material’s starch into alpha form (alpha form refers to the transformation of starch molecules into a less regular, gelatinized form by heating them with water).
Rice Syrup and Vegi Syrup Line
Materials that have been converted into alpha form in the steaming machine are transferred to a liquefaction scarification tank, where malt powder and water are added, and they are saccharified for 24 hours. | The saccharified rice syrup and vegi syrup are heated to over 100°C to stop the action of enzymes and undergo sterilization. | We adjust the sugar content (Brix 30-87) according to our customers’ requirements. We recommend a sugar content of over 80 degrees in our products. |
Temperature-Controlled Raw Material Warehouse
The temperature-controlled raw material warehouse is maintained at a constant 15°C, preventing the deterioration of brown rice and malt.
20-foot Refrigerated Container
Depending on the type of raw material, it may require storage in a refrigerated container at a storage temperature of 7°C. Strongly scented materials, those with volatile flavors, and heat-sensitive materials may also be stored in the refrigerator.
Raw Material Storage Area
Heated raw materials are stored at room temperature on steel racks.
